Characteristics of miso
Naturally matured, our miso is made from selected rice, salt, soy beans, and wheat. Containing less salt and no food additives, it is healthy and has a mild taste.

Ever since our establishment we have been sure to use only the best locally produced ingredients, maintaining the natural brewing traditions handed down from old. In the natural brewing process, fine ingredients and fine water, combined with a good environment are of the utmost importance. In our brewery we use running water from the Takahashi river and Bichu charcoal plentifully. First we ionize the water electronically, then spread out the charcoal in the maturing vats. It can especially be said of our natural miso "Gohyaku Haru", which uses chemical free organic soya beans cultivated on our crops in Hokkaido, organically produced chemical free Okayama rice, and the abundant source ofsalt minerals crystalized under the natural sun, that this product is good for the health of the body.
