We make Kamomidori Sake. Our basic policy when it comes to Sake manufacturing is...rice and water is everything. We have a long history of using our own grown 'Yamada Nishiki' rice.
When it comes to Sake manufacturing, rice is everything.... This is our basic policy. We use only the best quality rice grown locally including 'Yamada Nishiki' and 'Omachi', with 'Yamada Nishiki' grown by ourselves and on contract making supplies well secured. For the most part we limit the use of rice to that grown locally. We have been making sake for over one century since the Edo Period.
In order to make high quality sake, pure water is essential. Our sake production has been supported by our use of the cleanest of local waters ever since our establishment over one hundred years ago, to the extent of almost being called 'Shimizu-ya' (Pure water establishment). Our sake specialists while mulling over how to further improve our sake came across 'Electric water' and used such water in all our products in 1995. This process involves placing the water in a stainless steel tank and applying high electrical pressure to it notably improving the flavour.

We have been making sake for over one hundred years since 1867. Many years ago, rice and wheat were ground by mills run by water wheels powered by the water of the streams. We believe that this area is ideal for the production of sake with the natural surroundings.
