Though we are a relatively small soya sauce brewer, we are very particular when it comes to quality. Many soya sauces produced today use imported ingredients and artificial brewing techniques, maturing the sauce for a mere six to twelve months. Our soya sauce is produced using local wheat and 100% all-natural, sundried raw salt, which is then left to naturally mature for two to three years in wooden vats. By allowing our soya sauce to mature for an extended period, the resulting colour and smell is full and rich. Indeed, we are very proud of the soya sauce we sell to the public. Our new methods of soya sauce brewing employs amino acids, which break down the protein levels of soya beans naturally. At MORITA SHUYU JOZO-MOTO, we allow amino acids to develop naturally in a technique developed by our own technicians. We produce, wholesale and retail 'Yamato' brand of soya sauce, which comes in strong, weak and sashimi varieties; miso paste from rice, wheat and hisao; 'Homaresu' brand table vinegar; the main fermenting agent for pickles; and 'Yakiniku' sauce.
